Stuffed Peppers!

I found a great website today, and found a calorie counter along with it. The web site is called Sparkpeople.com, and it’s a free site that has all kinds of resources from nutrition to fitness, as well as a community site.

Today has been a slow day, and I have been pretty good about my eating. Here’s the run down for the day. I think I went over board on the carbs today, but it wasn’t overly excessive.

Breakfast: Fried egg on bread, with slice of cheese.
Snack: English muffin with peanut butter, and yogurt.
Lunch: Leftover spaghetti
Snack: Cinnamon raisin bagel with low-fat cream cheese
Dinner: Stuffed Pepper and open faced burrito – this was a weight watcher’s recipe from their cookbook. I love using new recipes, so I took some pictures of dinner tonight to show it off. Julia even got in on the yummyness.

  1. Looks pretty yummy! I find that eating healthy can be expensive! Yikes! I am going to start eating higher protein and low carbs. I am going to stay away from dairy, glutan, potatos, and something else, I can't remember now. I will have to look at the paper. I have been told I am allergic to those items. I am a bit confused on the "gluten". I guess it is in breads, pasta's and stuff. Who knows. I am feeling a bit overwhelmed with all the information that I received, and I can't remember half of it. If you have any insight, please fill me in.

  2. Who told you that you were allergic to all that? It's a common allergy in women, and gluten is in so many foods. Eating healthy isn't as expensive as people think, because the key to it is keeping your shopping focused on the perimeter of the store - i.e. fresh foods, fresh meats, dairy, and fresh baked goods. There is a lot of literature about a gluten free diet, so look it up and good luck if you choose to go that direction.
